Welsh rarebit

Welsh rarebit or Welsh rabbit ( or ) is a dish consisting of a hot cheese-based sauce served over slices of toasted bread. The original 18th-century name of the dish was the jocular "Welsh rabbit", which was later reinterpreted as "rarebit", as the dish contains no rabbit. Variants include English rabbit, Scottish rabbit, buck rabbit, golden buck, and blushing bunny.

Though there is no strong evidence that the dish originated in Welsh cuisine, it is sometimes identified with the Welsh caws pobi 'baked cheese', documented in the 1500s.

1. Welsh rarebit is sometimes thought of as just cheese on toast, which is what people call it when they want to patronise it.
2. It is strange that people not only insist on spelling Welsh rabbit as Welsh rarebit, but also think that by doing so they are performing some sort of explanatory task.
3. This is essentially a hi–tech handholding device, which explains to hoteliers and publicans how to give tourists "the unique Welsh eating experience". There are hints on how and where to source local food, along with recipes for authentically Welsh dishes such as homemade Celtic carrot and orange soup and fillet of Welsh beef topped with welsh rarebit.
4. The point of custard is essentially to help a dry pudding – treacle tart or spotted dick, say – down the gullet, but it is also a pudding in itself, especially when it becomes the divine dessert banana custard. (I have always found watching slices of banana sink slowly into a deep Pyrex bowl of custard particularly agreeable.) Welsh Rarebit Nothing pleases me more than finding these words on a menu.
